Asian-American style fresh spring rolls. Simple enough recipe: rice paper, bell peppers, mushrooms, cucumbers, greens, shrimp (roasted chicken, no meat, or any meat option you choose), sprouts, and special sauce all wrapped together. ANY VEGGIES SHOULD WORK so choose your favorites to toss into the mix!
Avocados are an absolute must! They really make the dish. Unfortunately, they’re hard to come by in Korea…and very expensive…so I didn’t use it in my rolls today. :-( (Okay, so not an “absolute must,” but seriously? You need them!)
Special sauce: My mom makes an absolutely delicious sauce that I like to use. A legit substitute that I would and have used in emergency situations is any Vietnamese rice paper sauce, chili garlic sauce, or a combination of the two.
